Artichoke Paella

After a long walk in the park today I wanted something filling and delicious. This paella recipe was super easy and tasted amazing! Soft artichokes, crunchy peppers, juicy tomatoes, sharp onions… It’s also packed full of turmeric and paprika, giving you some extra health benefits! I added some parsley from my own herb garden – so fresh and flavoursome!

Serves 4

  • 1 chopped large white onion
  • 1 chopped red pepper
  • 1 chopped yellow pepper
  • 120g frozen peas
  • 280g cooked artichokes
  • 240g paella rice
  • 800ml vegetable stock
  • 2 tbsp turmeric
  • 1 tsp paprika
  • Fresh chopped parsley
  • Salt and pepper to taste

Fry the onions in olive oil for 3 minutes, then add the peppers and rice. Fry for 5 minutes. Add the tomatoes, artichokes and half of vegetable stock – simmer for 10 minutes. Add turmeric, paprika, salt, pepper and the other half of the stock – simmer for 5 minutes. Add the frozen peas – simmer for 10 minutes or until all the stock is absorbed and the rice is soft. Stir through the parsley. Garnish with the lemon wedge and squeeze onto the paella – dig in!
